I'm trying something new with my food and cocktail posts. I've seen people always complain about how they hate reading food blogs because you have to scroll down a long story before you actually get to the recipe. Today I'm going to give you a short introduction to what today's food is, then the recipe and then write the long blurb that would normally go at the top of the post afterward.
Today's recipe is my favorite way to make French toast. French toast is probably my favorite breakfast/brunch food because it goes great with literally everything. Every time my husband took me to brunch, I used to order it with a mimosa on the side. I like mine fluffy with extra cinnamon and spice so that's how this recipe was born. Enjoy!
Cinnamon and Spice French Toast
Makes 4 pieces of French toast.
4 Slices of Bread
1/2 cup Heavy Cream
Apple Pie Spice or Pumpkin Pie Spice
Start by whisking the eggs until well mixed and then slowly add in heavy cream and mix together. Once fully mixed together, sprinkle spices to taste on top of egg/heavy cream mixture and gently stir two to three time.
Place a large frying pan on the stove on medium heat or if you're using a griddle, preheat to about 300-350 degrees.
Dip the bread into the egg mixture and allow to soak on each side for about ten to fifteen seconds before placing on the pan/griddle. Cook until golden brown on each side, about five minutes each, before removing from heat.
Top with your favorite toppings and enjoy!
What to Talk About Now?
I'll be honest: it's a little weird writing a blurb after the recipe. I almost don't know what to write about.
I still miss going out to brunch. My husband and I were sitting in the car the other day, and I realized that I really just miss things the way they used to be, like pre-Covid. I miss going out with my friends for margaritas and hang out and drink all night. I miss being able to go to the movies. I miss working full time and making the money I used to make. I miss being able to try on clothes in a store and try out makeup before I buy it. I miss being able to sit in a coffee shop. I miss normal date nights with my husband.
I just miss what life used to be like.
I don't know about you guys, but this year has been hard. I will say though, despite everything that's gone on this year and all of the craziness and stress we've all been dealing with, I've somewhat grown to appreciate 2020.
I was able to start this blog and have the time and energy to really invest in it so it could grow. I've met a lot of great people through Millennial Whiskey, I've gotten to really work on my writing, and I've discovered I have a big passion for photography.
My husband and I were able to really work on our relationship and become better partners to each other. While I wouldn't say that if the pandemic hadn't happened, we wouldn't have, but we spent so much time together this year, we kind of had to work through a bunch of issues we'd definitely would have put off working through had we both been working full time.
While the first two month of quarantine saw a thirty pound weight gain, I've since then been able to really dive into focusing on creating healthier habits, working on my relationship with food, and working out almost everyday. All of which led to me losing ten pounds so far and feeling better and stronger than I have in a while, including last year when I lost forty pounds on Keto.
I've been in therapy which has helped me so so much. I find myself being able to cope with my depression and anxiety better, I've allowed myself to open up to people more which has in turn, helped me feel more secure in my friendships, and I'm just overall happier. I'm allowing myself to just enjoy life through things like baking and making cocktails up and calling friends without telling myself I'm a bother and doing things for me that make me feel loved and appreciated by myself.
Maybe for you, this is just a post about French Toast and you didn't even make it this far down, but I don't know. I guess what I'm trying to say is that, while 2020 has been really hard and there are aspects of it I'm really looking forward to being over, I've become such a stronger and better person because of this year.
