Homemade Herb & Lime Guacamole

Maybe it's the millennial in me, but I live for guacamole. It's my favorite part about tacos and when I was doing Keto, I would eat it at least three times a week. Give me some guac and a margarita and I am SET for the rest of the day.


There's a restaurant called Bebedero, which is down the mall from the bar I work at, and they have the BEST guacamole and chips I've ever had in my entire life. I am straight up obsessed with this stuff. Everyday after a morning shift, I would stop by after work on the way to my car, order some guac to go, talk to some of my friends who work there, drink half of a margarita, and then go home and be happy.


Before the pandemic, I used to pay for people's drinks while I was working if they brought me this guacamole; it's that good. A couple of coworkers started doing it too after I started, so I guess you can say I'm a trendsetter. *flips hair*


Anyways, the problem I've been facing is since I haven't gone back to work yet, I haven't had their guac in like three months. I typically don't go downtown unless I'm working or with my husband. I've also been trying to stay home as much as possible still since a decent amount of people still won't wear masks and be considerate of other people.


Bebedero is doing delivery so I did order it at one point closer to the middle of quarantine. I was a bit disappointed though. It took a really long time to get to my house and I had to pay an extra $5 for delivery. Oh, did I mention it's like $14 an order? I love it, but it's hard to justify paying $20 for an order of guacamole when I'm not working.


But I still want to eat guacamole. All. The. Time.


Throughout this quarantine, whenever I've gotten a craving for guac, I just buy a container of Wegmans guacamole that they make fresh in the store, but that's $10 a container, it's not as good as Bebedero's, and it's not the same as taking a bite of guacamole that was made just for you (I know Bebedero guac isn't made "just for me" but let me be happy and have my moment).


So here I am again, wanting to eat some delicious guacamole and homemade chips while I lay on my couch and watch Netflix, and alas, I cannot. I don't really want to go downtown and Wegmans just isn't gonna cut it. I decided that I was gonna make some! Ordered some groceries through Instacart and here's what I came up with! It's pretty good if I do say so myself. Enjoy!

Homemade Herb & Lime Guacamole

Makes a lot of guac, like you could take this to a party.


Ingredients

4 Avocados

2 Roma Tomatoes

1 cup of onions

1 1/2 tsp of salt

1 tsp of garlic

1 1/2 fresh squeezed lime

Cilantro


Start by cutting and scooping the avocados into a bowl; save the pits for later. Take a fork or a potato masher and smush your avocados to the desired level of chunkiness.


Cut your tomatoes and onions into small pieces and add to your avocado along with the salt, garlic, and lime juice.


There isn't a measurement for cilantro because I was really excited about the cilantro and forgot to figure out how much I put it sooooo just put as much as you want in. Just make sure you chop it up really well so you don't get a giant piece of cilantro.


Mix all together, serve with chips and enjoy!


Take a shot for all of the avocado I dropped on the floor and toast to me having enough guacamole to last me the rest of the week.
